| Chef Interview: Delhi Restaurant |

Located along the Farrer Park stretch in Little India, Delhi Restaurant is considered as one of the pioneer restaurants there. This restaurant has been a participant of the Healthier Dining Programme for three years. Helming the kitchen is Chef Sharma Dilaram who has been working in this restaurant for 12 years.
HPB: Northern Indian cuisine is typically distinguished by the use of thick cream, coconut milk and ghee. How do you incorporate healthier modifications without losing too much of the flavour and authenticity of the dishes?
Chef Sharma Dilaram: Customers will not realise the difference in taste if the reduction of certain ingredients is done gradually. We reduce the amount of cream, salt and oil by a quarter and then incorporate other healthier ingredients to enhance the flavour.
HPB: Name two items on the menu which are healthier and popular with diners.
Chef Sharma Dilaram: Yoghurt Curry Chicken. This dish uses low-fat milk and yoghurt instead of coconut milk and the fat from the chicken is removed. The other hot favourite is Gobi Manchuria which is stir-fried cauliflower. This sweet and hot dish is simply stir-fried with chilli, among other ingredients.
HPB: What are some factors that you consider when planning a healthier meal for customers?
Chef Sharma Dilaram: We use ingredients which are healthy on their own such as fresh mushrooms, herbs and spices and we keep the cooking methods simple.
HPB: How do you promote the healthier dishes?
Chef Sharma Dilaram: Our staffs always recommend the healthier dishes to customers. Some customers need more explanation and convincing, before they are willing to try these healthier alternatives. Our staffs have been trained to handle customers’ queries about these dishes. |
