PALAK PANEER (A Classic North Indian Vegetarian Dish)
INGREDIENTS:
- Spinach (Palak) Leaves
- Cottage Cheese (Paneer) Cubes
- Cream
- Ghee (Clarified butter)
- Ginger (Cute Fine)
- Green Chillies (Chopped)
- Maize Flour (Make ka atta)
- Onions (Chopped)
- Red Chilli Powder Salt (To taste)
- Tomatoes (Finely cut)
- Water

METHOD:
| - Romove the stalks of the spinach leaves.
- Wash very well & cut fine.
- Add water & cook for 10 mins.
- Drain the excess water & puree in blender
- Add the paneer cubes to the puree & mix well.
- Add msize flour slowly & cook for 10 mins
(This acts as a thickening agent)
- In a separatepan, heat the ghee.
- Brown the onions & most of the ginger.
- Add red chilli powder & stir.
- Pour this sauce over the paneer-spinach mixture.
- Stir well & cook through for 5 mins.

TO SERVE:

Garnish with the remaining pieces of ginger, tomato to pieces, green chillies & cream.Serve with green salad & naan.
